(German below) Summer means having watermelon as a daily staple in my kitchen. I honestly love he classic watermelon and feta combo, it's one of those recipes I can make every day. But this high-protein Asian watermelon salad with loads of veggies and white beans has quickly become a new favorite.

The combination of sweet, juicy watermelon, fresh vegetables, creamy white beans, and protein-packed edamame is incredibly refreshing, while the simple soy-lime dressing adds the perfect savory twist. It's light enough for hot summer days, yet filling enough to enjoy as a satisfying lunch or easy dinner.

What I love most about this salad is how effortless it is. It comes together in just a few minutes, is perfect for meal prep, and is ideal for BBQs, picnics, or bringing along to a summer event. Plus, it's naturally vegan, packed with plant-based protein, and full of fresh, colorful ingredients.

RECIPE FOR THE HIGH-PROTEIN ASIAN SUMMER SALAD WITH WATERMELON (2 portions)

  • 300 g watermelon, diced

  • 100 g arugula (rocket)

  • 240 g white beans, drained and rinsed

  • ½ cucumber, diced

  • ½ red onion, finely diced

  • 2 spring onions (scallions), finely sliced

  • 150 g cooked edamame

  • 2 tbsp lime juice (or lemon juice)

  • 1 tbsp soy sauce

  • 1 tbsp olive oil

  • For garnish: fresh chili and lime wedges

  1. In a large bowl, combine the watermelon, arugula, white beans, cucumber, red onion, spring onions, and cooked edamame.

  2. In a small bowl, whisk together the soy sauce, olive oil, and lime (or lemon) juice until well combined.

  3. Pour the dressing over the salad and gently toss to coat all the ingredients evenly.

  4. Garnish with fresh chili and lime wedges, then serve immediately.

Im Sommer gibt es bei mir eigentlich fast täglich Wassermelone. Ich liebe den klassischen Wassermelonen-Feta-Salat und könnte ihn wirklich immer essen. Aber diese High-Protein-Variante mit asiatischem Twist, jeder Menge frischem Gemüse, weißen Bohnen und Edamame hat sich dieses Jahr ganz schnell zu einem neuen Lieblingsrezept entwickelt.

Die Kombination aus süßer, saftiger Wassermelone, knackigem Gemüse, cremigen weißen Bohnen und proteinreichen Edamame ist unglaublich erfrischend. Das einfache Dressing aus Sojasauce, Limettensaft und Olivenöl sorgt für die perfekte Balance aus fruchtigen und herzhaften Aromen und macht den Salat zu einem echten Sommerhighlight.

Besonders gerne mag ich an diesem Rezept, dass es in wenigen Minuten zubereitet ist und sich wunderbar vorbereiten lässt. Ob als leichtes Mittagessen, schnelles Abendessen, zum Grillen, Picknick oder für die nächste Sommerparty, dieser Salat passt einfach immer. Ganz nebenbei ist er vegan, reich an pflanzlichem Protein und steckt voller frischer, bunter Zutaten.

REZEPT FÜR DEN HIGH-PROTEIN ASIATISCHEN SOMMER SALAT MIT WASSERMELONE (2 Portionen)

  • 300g Wassermelone (klein geschnitten)

  • 100g Rucola

  • 240g weiße Bohnen

  • ½ Gurke (klein geschnitten)

  • ½ rote Zwiebel (klein geschnitten)

  • 2 Frühlingszwiebeln (klein geschnitten)

  • 150g Edamame (vorgekocht)

  • 2 EL Limetten oder Zitronensaft

  • 1 EL Sojasauce

  • 1 EL Olivenöl

  • Zum Garnieren: Chili und frische Limette

  1. Wassermelone, Rucola, weiße Bohnen, Gurke, rote Zwiebel, Frühlingszwiebel und vorgekochte Edamame in eine große Schüssel geben

  2. Alle Zutaten für das Dressing (Sojasauce, Olivenöl sowie Limetten oder Zitronensaft) in einer kleinen Schüssel verrühren

  3. Das Dressing über den Salat geben und vorsichtig vermengen

  4. Mit Chili und frischer Limette garnieren und sofort servieren
