Since I am creating so many apricot recipes at the moment, it was time for the classic apricot recipe: an Austrian apricot cake. My recipe is completely free of industrial sugar, is vegan and really only needs a few ingredients.

Since I am a big fan of rice waffles in all variations and wanted to make a quick snack recipe with the remaining apricots from the garden, I came up with a really simple & delicious "recipe": apricot chocolate coconut rice waffles.

Time for a savoury dish with apricots namely a refreshing summer salad with apricots from the garden, spinach leaves, roasted chickpeas, carrots and beetroot. Especially on hot summer days, the salad is highly recommended.
