EASY AUTUMN BREAKFAST: BAKED OATS WITH APPLE & CINNAMON
(German below) Ever since I first tried baked oats a few years ago (check out my first baked oatmeal recipe with dark chocolate, cinnamon and pear here), I've been a big fan of this simple breakfast recipe. Because if I'm honest, I have to admit that this healthy brunch favourite actually tastes like cake - except that there's no sugar or other "unhealthy" foods in the recipe (unless maple syrup or something else is added to sweeten it).
That's why it's no wonder why baked oatmeal tastes good to (almost) everyone. That's why I came up with an autumnal recipe with fresh apples and cinnamon. The smell when preparing the dish is truly unique and will conjure up an oatmeal breakfast dream.

RECIPE FOR THE BAKED OATS WITH APPLE & CINNAMON (2 portions)
1 cup rolled oats
1 cup (plant-based) milk
1 tbsp chia seeds
1 ripe banana
½ tsp bourbon vanilla
1 tsp cinnamon
A pinch of salt
1 apple
Preheat the oven to 180°C top and bottom heat.
Mash the banana with a fork and mix with the oats, (plant-based) milk, chia seeds, bourbon vanilla, cinnamon and salt.
Dice the apple and fold it into the mixture, or arrange apple slices on top of the oat mixture.
Transfer the mixture to a small baking dish and bake for 20-25 minutes, until the baked oats are golden brown and set.
Let cool slightly and enjoy!
Seitdem ich zum ersten Mal gebackene Haferflocken vor einigen Jahren ausprobiert habe (mein erstes Rezept für die gebackenen Haferflocken mit dunkler Schokolade, Zimt und Birne gibt’s hier) bin ich ein großer Fan dieses einfachen Frühstücksrezepts. Denn wenn ich ganz ehrlich bin, dann muss ich zugeben, dass dieser gesunde Brunch Favorit eigentlich wie Kuchen schmeckt - nur dass eben kein Zucker oder andere „ungesunde“ Lebensmittel in dem Rezept vorzufinden sind (außer es wird Ahornsirup oder etwas Anderes zum Süßen hinzugefügt).
Deswegen ist es sicherlich kein Wunder, warum gebackene Haferflocken wirklich (fast) jedem schmecken. Aus diesem Grund habe ich mir ein herbstliches Rezept mit frischen Äpfeln und Zimt überlegt. Der Duft beim Zubereiten des Gerichts ist wirklich einzigartig und wird ein Haferflocken Frühstückstraum gezaubert.

REZEPT FÜR DIE GEbackenen haferflocken mit apfel & Zimt (2 Portionen)
1 Tasse Haferflocken
1 Tasse (pflanzliche) Milch
1 EL Chia Samen
1 reife Banane
1/2 TL Bourbon Vanille
1 TL Zimt
Prise Salz
1 Apfel
Backofen auf 180 °C Ober-/Unterhitze vorheizen.
Banane mit einer Gabel zerdrücken und mit Haferflocken, (pflanzlicher) Milch, Chiasamen, Bourbon-Vanille, Zimt und Salz vermischen.
Apfel klein würfeln und unterheben bzw. Scheiben auf der Haferflocken-Mischung verteilen.
Die Masse in eine kleine Auflaufform geben und für 20-25 Minuten backen, bis die Baked Oats goldbraun und fest sind.
Kurz abkühlen lassen und genießen!
