STIR-FRY RICE PAPER VEGGIE SQUARES: EASY VEGAN SNACK
Did you know you can turn simple stir-fried veggies and rice paper into tasty little snack squares? It’s one of my favorite easy ways to enjoy rice paper beyond the usual fresh summer rolls! You just sauté your veggies, wrap & fold everything into little squares, et voilà - you’ve got the easiest savory snack or appetizer, ready in minutes. The combination of the flavorful veggie filling (I used kale, eggplant, zucchini and spring onions) with the rice paper and soy sauce dip is so satisfying & you need to try them too!

REFRESHING EXOTIC MANGO AVOCADO SUMMER SALAD
In summer I just love refreshing salads which are packed with wholesome ingredients, protein and nutrients. That’s why my easy exotic mango avocado salad is perfect for your next summer lunch or dinner. You only need a few fresh fruits and veggies and the dressing out of soy sauce, lemon and lime juice, sesame oil and honey/ agave syrup is perfect if you’re craving a kind of different salad. I also love to prepare the salad in advance as a mealprep or for a summer picknick!

This high-protein black currant sorbet is the perfect refreshing summer treat! Made with just three simple ingredients: black currants (known as "Ribisel" in Austria and “schwarze Johannisbeeren” in Germany), creamy cottage cheese, and honey. It’s fruity, tangy, naturally sweet, and packed with protein. No ice cream maker needed, and ready to prep in just a few minutes.

I looooveee ice cream and fun fact I used to work in the ice cream department of a big company and so had at least 1 Magnum a day.
